We are proud to partner with local organic farmers and producers who embody the values of sustainability and integrity. Phatt Farmer, a women-owned farm, produces organic, pasture-raised chickens that set the standard for wholesome, flavorful dining. Running W provides grass-fed, pasture-raised beef and pork, celebrated for their depth of taste and natural quality. Crazy Coconut Dairy supplies fresh organic raw milk, ice cream and yogurt, staples of our kitchen that reflect purity and care. From Valley Stream Gardens, we welcome the bounty of farm-fresh vegetables, bright citrus, pineapples, papayas, and freshly cut flowers that bring color and life to every table.

The sea is part of our story, too. Every piece of seafood we serve is locally sourced and sustainably caught, ensuring that each meal supports both our guests’ well-being and the health of our marine environment. Our breads and baked goods are made with organic whole wheat flour, rice, barley, and ancient grains, hearty, nourishing staples that reflect tradition and simplicity. For cooking, we choose fats and oils that are natural and time-honored: tallow, lard, and organic olive oil, each adding richness and honesty to our food.
